I've recently taken up cooking.
Normally we've relied on frozen food and skillet meals to
get by on, but this summer I've started cooking a new recipe once a week.
My favorite go-to recipe for a great side dish is Roasted Asparagus.
I used a picture from a different website, because I'm always forgetting to take photos
but the recipe below is from my own stash, given to me by a lady at my church.
2 lb fresh asparagus
olive oil
black pepper
garlic salt
a lemon
1 tbsp. butter (optional)
Preheat the oven to 400 degrees.
Break off the tough ends of the asparagus & place the asparagus on a sheet pan.
Drizzle with olive oil, the toss to coat the asparagus completely.
Add the juice of the lemon.
Spread the asparagus in a single layer and sprinkle liberally with salt and garlic pepper.
Roast the asparagus for15 to 20 minutes, until tender but still crisp. Add butter as a finishing touch if
you would like.
And voila!
I've made this about 5 or 6 times and I never get tired of it.
I've also gotten rave reviews for everyone that's tried it, including my husband.
Also it only takes 15 minutes to make which is a bonus in my book.
